Cocoa powder – Take any cocoa powder you have at your home. But a good brand of cocoa powder will give you the most chocolatey satisfaction. We prefer to use 100% natural cocoa powder. Because it gives a good raise by reacting with baking powder. 

Instant Coffee – This ingredient is the heart of this mocha cupcakes recipe. To get a good coffee flavor in the cupcakes we are using instant coffee. It will provide a strong flavor of coffee in cupcakes. Although, you can use espresso powder if you don’t have instant coffee at home. But make sure to adjust the amount as per your taste.

Baking powder and baking soda – Baking powder and baking soda both are leavening agents. They help you to get a good rise.

Sugar – Sugar is needed to sweeten the mocha cupcakes. But if you want to omit the sugar for any health issues then it is perfectly ok. You can always sweeten your cupcakes with some chocolate sauce.

Step 1

In a medium bowl mix hot water and instant coffee. Cool it completely and then mix all the wet ingredients- egg, melted butter, melted chocolate, and vanilla extract until they are just combined.

Step 2

Sift in the flour, cocoa powder, baking soda, baking powder, and salt. Add sugar to this dry ingredients mixer and whisk together.

Step 3

Mix the dry ingredients with the wet ingredients and whisk together until they are just combined. Don’t overmix the mixture at this point.

Step 4

Line your cupcake pan with some cupcake liners and fill them with coffee cupcake batter.

Step 5

Bake at 350ºF for 16-18 minutes until a toothpick inserted comes out clean or the center is all set.

Step 6

Serve it with some whipped cream or buttercream on top.

How to Make Whipped Cream

Step 1

In a large bowl, take cold heavy cream. Whip the cream until stiff peaks are just about to form. 

Step 2

Add in vanilla extract and icing sugar gradually until stiff peaks form.

Make sure not to over-beat the cream otherwise it will become butter-like.

How to Decorate Mocha Cupcakes
